New KitchenAid+lack of homework+generous grocery-buying parents+major winter munchies = I’ve been baking a LOT lately. These are the Pignoli Almond cookies from Vegan Cookies Invade Your Cookie Jar. Here is the recipe. I’ve slowly discovered that baking is a lot messier than regular cooking (especially if you forget to spray your pans), but these particular cookies were fairly low-mess. I adore anything almond flavored, as it reminds me of Chowking almond jelly from long, long ago.
I’ve also been baking/roasting stuffed peppers, cauliflower, mushrooms, a LOT of bread, sweet potato fries, and the heart healthiest choc. chip cookies in the world. I also plan to roast chickpeas and attempt crackers very soon.
